My First Dining Guide Gala: Inside Hungary’s Restaurant of the Year 2026

Hungary's restaurant year gets read out loud in one evening, and in 2026 it came with a twist: the winner had to be re-tested first. A first timer's night at the Dining Guide gala, from the rain in the line to the people clearing the plates.

Hungary’s restaurant year has a scoreboard, and once every autumn it gets read out loud. On 21 September 2026 the Dining Guide gala filled the Várkert Bazár at the foot of Buda Castle, and Magyar Minute was in the room for the first time.

What gets called from that stage takes a year to decide. For the 2026 edition the guide’s testers ate at around 500 places before a word was printed. The book that came out of it lists 180 restaurants and close to 70 more casual venues, and it adds a brand new Top 50 of pizzerias, which is its own quiet verdict on how Hungary eats now. Fausto Arrighi, the former director of the Italian Michelin guide, advised the edition for a 9th year.

Why the top 10 has 12 restaurants in it

For the 6th year running the list is 10 plus 2. The reasoning, spelled out from the stage, is that top level cooking here no longer arrives in a single format. Rooms with a relaxed atmosphere, less formal service and experimental kitchens now score high enough to sit beside the classic fine dining houses, so the guide widened the circle rather than leave them out.

The rule that sent the winner back for re-testing

Dining Guide keeps a status above the ranking called Best of the Best. To hold it, a restaurant has to have won Restaurant of the Year at least 3 times, keep the same professional leadership and the same address, and stay above 90 points without a break. If the kitchen leadership changes, the status lapses automatically and the restaurant is evaluated again from the beginning.

That is exactly what happened at Stand. Szulló Szabina stepped back from the daily work of the kitchen after the family had a baby, and Benjamin Morris, who had been on the team for years, took over as head chef in October 2025, working alongside Széll Tamás. The re-rating went in their favor. Stand took Restaurant of the Year for the 5th time and kept Best of the Best.

A hard year to be a restaurant

The evening was not a victory lap. The hosts were blunt about the state of the trade: the economy has slowed new openings, trained staff are hard to find, and simply holding quality steady counts as an achievement. A week before the gala the guide had devoted a roundtable to the same problem. Seen against that, every name called out had earned the walk.

The 7 special awards

  • Chef of the Year: Tatai Márton of Hoppá! Bistro
  • Young Chef Talent of the Year: Berecz Ádám of Sulyom Tájétterem in Sarud
  • Sommelier of the Year: Juhász Krisztián, who runs the lists at both Borkonyha and Textúra
  • Service Person of the Year: Király Zsolt of Rumour by Rácz Jenő
  • Pizza of the Year: Anyukám Mondta in Encs, from the new Top 50 pizzeria list
  • Most Promising Restaurant: Cova Budapest, the Milanese café house founded in 1817, now in the Matild Palace
  • Innovative Kitchen of the Year: Alkimista Kulináris Műhely in Szeged, handed over by the Speaker of the National Assembly

What happens after the trophies

Once the awards wrapped, the hall turned into a tasting. Restaurants that were guests rather than winners had set up stations around the room, and the wine and champagne came out. Among them was ÉS Bisztró, the Hungarian and Austrian bistro inside the Kempinski Hotel Corvinus Budapest, which reopened in March 2026 after a full rebuild of its look and its menu.

The man running that station was Péter Bárdos, the hotel’s executive chef, who spent the first part of the conversation explaining the room, the order of events and who was who, and only later mentioned what he actually does. His kaszinótojás, the Hungarian deviled egg, came topped with salmon roe and sturgeon caviar. The rest of his table read like a tour of the Hungarian canon with the volume turned up: a Mangalica slider on beer brioche, beef cheek pörkölt, somlói galuska, Rákóczi túrós and képviselőfánk.

Nobu Budapest and Szaletly were pouring and plating a few steps away, and the international partners in the room, the French caviar house Kaviari, the champagne house Gosset and the Italian mill Molino Dalla Giovanna, gave the evening its trade fair edge. On what the chefs themselves say matters, one of the award winners put it best from the stage: none of it happens without the team behind you.

The part with no trophy

An evening like this runs on people nobody writes about. The crew setting out tables, the ones clearing them before a guest notices an empty plate, the kitchen assistants moving at a jog so the chefs can stand still and plate, the musician and the DJ who kept the room going after the ceremony, and the students working the sponsor stands, 2 of whom had just finished university and were on their way into research. They will not appear in any of tomorrow’s coverage, which is a good enough reason to put them in this one.

The guide exists to sort restaurants into an order. The evening itself was a reminder that the order only holds up because several hundred people spend their working lives making other people comfortable.

One more thing, and I will declare the interest up front. I also run a platform called Dafado, where an event keeps its conversation going after everybody has gone home. I listed the gala on it.

So if you were there, add your voice. Literally, if you like. You can record a note instead of typing one, and you can do it in whatever language you would actually have said it in, Hungarian included.

I am asking because a night like this leaves almost no trace. A few photos get posted, the certificates go on a wall, and by the weekend the evening has evaporated. A few sentences from somebody who was standing there is the only record that survives.
